Of all the holidays we enjoy in this country, the 4th of July might just be my favorite. The joy, colors and fireworks are the true symbols of the celebration. Ever since I've lived in the U.S., I commemorate this day with pride and gratefulness for a nation that has welcomed me and allowed me to have a family and give them a bright future. In the United States, the signing of the Declaration of Independence is celebrated on the 4th of July. Everywhere you go in the country you'll find parades and fireworks. I have plenty of reasons to celebrate, and I love getting together with my friends and family and delighting them what I do best: a few delicious recipes! For this Independence Day, I'm preparing a sophisticated shrimp cocktail with a lemon aioli. It's a wonderful recipe with simple ingredients that combine to create an explosion of flavor to complement the 4th of July fireworks!

Ingredients

  • 1 pound medium shrimp
  • 12 prawns with head
  • 1 egg yolk
  • 1/2 teaspoon grated lemon zest
  • 2 tablespoons lemon juice
  • 1/8 teaspoon hot sauce
  • 1 clove garlic, crushed
  • 1/2 cup extra virgin olive oil
  • 1/2 cup whipping cream
  • 1 medium avocado

For garnish

  • Caviar
  • Chives

Directions

    Add the shrimp and prawns to a medium pot with sufficient water and let boil for about 3 minutes or until they're pink. Peel and devein the shrimp, chop into pieces and set aside. Set the prawns aside as well, but leave them whole for decoration.

    For the aioli, add the yolk, lemon zest and lemon juice, hot sauce and garlic in a food processor. Season to taste. With the processor running, add the olive oil little by little until you achieve a consistency like mayonnaise.

    Whip the cream in a separate container using an electric mixer until the yolk get peaks. Fold in the cream with the mayonnaise.

    Last, peel and cut the avocado into small pieces.

    Fill small cups or glasses with one tablespoon of aioli, pieces of shrimp, and top with pieces of avocado.

    Decorate with caviar and chives, and place a prawn on the ring of each cup or glass.
