Ingredients

cups Spring Mix greens

orange slices

pink grapefruit slices

cooked shrimp

teaspoons combination of finely chopped chili pepper, green and red bell pepper
1/2
cup simple vinaigrette, made with olive oil, lemon juice, salt, pepper and oregano

    Make a bed of lettuce in a salad bowl. Arrange, one on top of the other, 2 slices of orange and grapefruit, 1 teaspoon of the pepper mix and 7 shrimp per plate to form a stack.

    Serve with the simple dressing on the side, and drizzle over salad, to taste.

Expert Tips

  • Try swapping the Spring lettuce mix for fresh spinach or arugula. You may also use balsamic vinegar instead of the simple vinaigrette described above.
