Ingredients

  • 1 box Fiber One™ apple cinnamon muffin mix
  • 3/4 cup water
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 1/2 cup ricotta cheese

Directions

    Preheat oven to 350 °F.
  • 2
    Add muffin mix to a large bowl, add water, oil, eggs and ricotta cheese. Use a spatula or electric mixer to combine all the ingredients.

    Add the batter to a lightly greased baking dish and bake for 20 minutes or until a knife inserted near center comes out clean.

    Remove from oven and let cool.

    Cut into squares, serve and enjoy with your favorite drink.
