  • 1
Put the flour, rice flour, eggs, milk, water, oil and salt in the blender. Blend until mix is homogeneous. Transfer to a bowl, cover and refrigerate for a couple of hours.
  • 2
Heat a nonstick skillet on medium heat. Place approximately 1/4 cup of crepe batter in the skillet and swirl it around in circles quickly, to spread the batter over the whole surface. Cook for 3 minutes. Carefully turn over the crepe and cook for 1 more minute. Transfer to a plate and cover with wax paper. Repeat with the remaining batter.
  • 3
In the meantime, put the yogurt in a bowl. Season with salt and pepper. Mix well and set aside.
  • 4
Assembly: Place a crepe on the work surface. Spread Greek yogurt on it. Arrange a few slices of trout and hearts of palm on each crepe. Fold it in half and then again in half.
  • 5
    Repeat with the remaining crepes.
  • 6
Top with chives and decorate the dish with some salad greens, if you want.
  • 7
    Serve at room temperature.

Expert Tips

  • If you can't find brown rice flour, replace it with the same amount of sweet rice flour (not glutinous).
  • Don't get confused with the thick rice flour that is used to make rice cream, because the result will be completely different.
  • Replace the trout with smoked salmon, or if you prefer, with prosciutto.
  • Replace the hearts of palm with another vegetable you like, for example, mushrooms.
