Vianney Rodriguez I love kimchi, but the process can be long and take hours to prepare. I've come up with a quick and easy recipe that gives me instant satisfaction and includes a few of my favorite ingredients. MORE + LESS -

Ingredients

large head cabbage, thinly sliced

tablespoons sea salt, divided

cups warm water

inch piece ginger, peeled and diced

large garlic cloves
1
jalapeno, sliced (remove seeds for less heat)

tablespoon sugar
1
tablespoon fish sauce
4
medium carrots, peeled and cut into 1/4 inch strips
3
scallions cut into 1/4 inch lengths
1
large jicama, peeled and cut into 1/4 inch strips
1/2
cup cilantro, washed and stems removed

    Place cabbage into a large bowl, sprinkle with 4 tablespoons salt and cover with warm water. Mix with fingers to combine cabbage and salt; set aside for 30 minutes. Drain well and return to bowl.

    In a food processor puree ginger, garlic cloves, jalapeno, sugar, fish sauce and 1/3 tablespoon salt. Taste and adjust seasoning to your preference.

    To the drained cabbage add carrots, scallions, jicama, puree from blender, and cilantro; toss to coat.

    Place in a clean glass jar and refrigerate for 4-6 hours.

Expert Tips

  • Use jalapeno, Serrano or any other type of chile for this recipe.
