There are many ways to prepare potatoes. You can serve them as a side with meat or as a main dish. The best thing about them is that you can prepare them in just a few minutes using the microwave and then fill them with vegetables, cheese, sour cream or a bit of olive oil and you’re ready to go. Ingredients

large potatoes to bake

medium onion, finely chopped

garlic cloves, finely chopped

lb ground beef
1
tablespoon olive oil
1
cup frozen mixed vegetables
1
packet Old El Paso™ 25% Less Sodium Taco Seasoning Mix
1/4
cup of water
1
cup cheese sauce
Salt and pepper to taste

    Wash the potatoes with a brush, place on a dish, poke with a fork and cover with wax or parchment paper. Cook in the microwave for 8 minutes. If you would rather use the conventional oven, use aluminum foil instead of parchment paper and bake for an hour at 350°F.

    To cook the ground beef: Sauté the onion in a large pan and add the garlic to let cook for 2 minutes. Add the beef, mix well to it separates. Cook until it looses the pink color entirely. Now add the Old El Paso™ seasoning, the water, mix well and cover. Add the vegetables and let cook for 15 minutes.

    Once it’s ready, open the potatoes by creating a cut from one end to the other. Apply a bit of pressure to open and fill with the meat and veggies. Pour a bit of cheese sauce on top of each.

Expert Tips

  • Use sour cream instead of cheese sauce.
