Ingredients

  • 1 lb good-quality semisweet chocolate, chopped
  • 2 teaspoons peppermint extract, divided
  • 1 lb good-quality white chocolate, chopped
  • 3 large candy canes (or 14 peppermint candies), crushed in small pieces

Directions

  • 1
Line a 9’’x13’’ baking sheet with aluminum foil. Make sure the foil lines the sides of the dish approximately 2/3 way up.
  • 2
Prepare a bain-marie. In a medium bowl, heat 1 cup water over medium heat. When the water begins to steam, place a heat-proof bowl over saucepan avoiding contact with water. Place chocolate pieces in bowl and stir until chocolate has melted and is smooth. Stir in 1 teaspoon of peppermint extract.
  • 3
Pour chocolate into prepared baking sheet. Place in the freezer to set.
  • 4
Repeat water bath process with white chocolate. Stir in 1 teaspoon of peppermint extract. Pour white chocolate over set chocolate layer. Sprinkle with candy cane pieces.
  • 5
Return dish to freezer for 20 minutes or until white chocolate layer is set. Remove peppermint bark from dish by pulling on the aluminum foil. Break peppermint bark in large pieces and package in cellophane or tin boxes.
