The peanut, or cacahuate as its known in Mexico, is a very versatile ingredient that can be used in savory or sweet dishes, either as a snack or even in a cocktail. In the Mexican state of Veracruz, peanut butter is used in a delicious drink called torito. People also know it as Mexican Irish Cream and it’s the recipe that I’m sharing with you today: a peanut cocktail inspired by the Veracruz drink. Let’s cook!

Ingredients

  • 1 can (14 ozs) condensed milk
  • 1 can (12 ozs) evaporated milk
  • 1 cup peanut butter
  • 1/2 cup of white rum
  • 1/2 cup of toasted peanuts for garnish

Directions

    Place the condensed milk, evaporated milk, peanut butter and rum in a blender and blend until well mixed.

    Pour the liquid into a jar or bottle with a cap and refrigerate until ready to serve.

    I recommend serving it very cold in medium glasses or highballers. You can garnish the drink with bits of peanut. This cocktail is perfect for dessert or a friendly get-together.

    You can use vanilla-flavored vodka in place of the rum if you like.

    This drink can last a few weeks if it is well refrigerated in a glass container with a lid.
