Ice cream sandwiches and cake are summer classic, they're very practical because you can prepare them ahead of time and keep the frozen. You could even create a bar with different types of cookies and ice creams so everyone can make their own. These are my daughters' favorites since they love peanut butter and jelly. I use ready to bake peanut butter cookies and strawberry ice cream. Then I dip them in chocolate and sprinkle them with chopped peanuts. Delicious! MORE + LESS -

  • 1
Bake the cookies according to their instructions and let cool completely on a rack.
  • 2
Take the ice cream out of the fridge 10 minutes before making the sandwiches to allow the ice cream to soften a bit.

Place a large tablespoon of ice cream over one cookie, top with another cookie and apply pressure lightly. Use a knife to remove the excess ice cream. Place on a plate and reserve in the freezer.
  • 4
Repeat 5 more times, using all the cookies.
  • 5
Freeze the cookies for at least 20 minutes.
  • 6
Heat the chocolate in the microwave, 20 seconds, stir and repeat. You can also use the double boil method stirring until completely melted.
