During these wonderfully hot summer days, one needs a sweet, ice filled, and why not “spice-cold” tea to quench your thirst! Let me introduce you to my summer friend: peach ginger iced tea. I like to add fresh peaches to it to give it a sweet, juicy fresh summer zing. They complement the ginger very nicely and seriously, it will do the trick when looking for a way to cool your body down. It’s always been one of my go-to drinks for the hot season. Give it a try… I guarantee you’ll feel better afterwards!

Ingredients

  • 1 large piece fresh ginger (about the size of your hand), peeled and cut into 1/2-inch pieces
  • 2 peaches, pit removed and cut into slices
  • 10 cups water
  • 3/4 cup honey

Directions

    In a large pot over a medium-high heat add ginger, half of the peach slices and 7 cups of water. Bring to a boil.

    Let boil for 15 minutes. Then remove from heat and allow fruit and ginger to steep in water for a minimum of 30 minutes.

    In a large pitcher add 3 cups of water and honey. Stir together until honey is completely dissolved in water. Then add in remaining peach slices.

    Once ginger peach water has cooled, remove the ginger pieces from the water, then pour into the pitcher with the honey water.

    Give the whole mixture a good stir and place in the fridge over night. Pour over ice and enjoy!

    For an extra spicy/ginger taste, leave the ginger pieces in the tea. Do not strain them out.
