Pasta with Mussels in Wine Sauce

If you’re looking for a seafood dish that is inexpensive and easy to make, just pick up a few pounds of mussels. They’re delicious when combined with garlic, onions, and tomatoes in a wine sauce, either red or white. We often find ourselves believing that these dishes are too complicated to prepare, not realizing that in just a few minutes you and your family can be enjoying a delicious meal.

Ingredients

  • 1 pack (16 ozs) of rigatoni pasta, uncooked
  • 3 lbs of mussels, washed and deveined
  • 2 tablespoons of olive oil
  • 1 medium onion, chopped
  • 2 green chives
  • 1 garlic clove, chopped or mashed
  • 1 cup of pasta sauce
  • 1 bell pepper, chopped
  • 4 seedless roma tomatoes, chopped
  • Salt and pepper to taste
  • 1/2 cup of white wine

Directions

    Cook the pasta according to the instructions on the package.

    Heat the oil in a large saucepan over medium heat. Add the onions and garlic, sauté for 5 minutes or until tender, add sauce.

    Add the bell pepper and salt/pepper.

    Add the tomatoes and wine, let boil. Reduce heat to low and add the mussels, cover and cook for 7 minutes or until they open. Serve over the pasta, sprinkle with chives or fresh basil.

  • You can use scallops or shrimp instead of mussels.
  • You can also use clam juice in place of wine.
