One of the snacks I miss most from my native Colombia is the pandequeso. It’s common to walk around the streets of Colombia and run into the smell of fresh pandequesos from the multitude of bakers. We usually enjoy them with coffee or chocolate, though when it’s warm we like to serve them with soda to quench thirst. They’re so delicious that they go great with nearly anything! What do you eat them with?

Ingredients

  • 2 cups cassava starch
  • 3 cups salted cheese (Cotija or Costeño)
  • 1 pinch sugar
  • 1 egg
  • 1 pinch salt
  • 1 cup milk

Directions

    Preheat the oven to 350° F.
  • 2
    Mix the yucca starch with the cheese, sugar, egg and salt in a bowl. Keep mixing with your hands and add the milk little by little until the dough moistens.

    Separate the dough into small portions and stretch over a table to give them their shape. Place on a greased mold and bake until they grow and look lightly browned, for 15-20 minutes.

    Remove from oven and serve immediately.

    To make your dough easier to handle, heat the milk a bit before adding it to the mixture.
