When I first announced I would be making beets for dinner, my husband was not at all happy. He grew up eating canned mushy beets with no flavor, so just the mere mention of them made him cringe. After I explained that I would be roasting the beets and serving them with a citrus glaze, he was willing to give them a try. This recipe for oven roasted beets is super simple to pull together and is great served with chicken or pork. Roasting the beets enhances their flavor while the simple citrus glaze adds a touch of freshness. Trust me, your family will love them. Ingredients

  • 12 beets, washed and scrubbed
  • 4 tablespoons olive oil
  • Salt, to taste
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 2 teaspoons orange zest
  • 2 tablespoons fresh orange juice

Directions

    Trim ends of beets and place on a sheet of foil, drizzle with 2 tablespoons of olive oil, sprinkle with salt and wrap loosely to seal edges.

    Place on a baking sheet. Bake for 1 hour or until fork tender; cool completely.

    Peel off the outer skins, slice and place in serving dish.

    In a non-stick skillet combine the remaining 2 tablespoons olive oil, butter, honey, zest and orange juice. Bring to a boil; reduce heat and drizzle over beets. Serve warm.
