Oven-Baked Stuffed Pork Loin

Stuffed tenderloin is one my Mexican families favorite dishes. We try to prepare it for special occasions, like our Sunday reunions or birthday parties. Stuffed tenderloin is a simply prepared dish and will make your dining table look wonderful. You can fill it with nearly anything, but in my house we generally use a mix of garlic, ham and herbs. This time I added raisins to give it a light sweetness. Serve with green salad and mashed potatoes.

Ingredients

  • 1 (about 1 lb) Pork loin
  • 6 sprigs parsley, washed and finely chopped with the stems and everything
  • 5 garlic finely chopped
  • 4 slices of ham finely chopped
  • 1/2 cup raisins
  • 1 tablespoon olive oil
  • Salt and pepper
  • 1 1/4 cups beef broth, divided
  • 1 tablespoon cornstarch
  • 1 tablespoon butter

Directions

    Clean the pork loin and use a very sharp knife to make a slit across the center from side to side, careful not to cut the walls.

    Pre-heat the oven to 450°F.

    Mix parsley, garlic, ham and raisins. Fill the center of the entire spine with this mixture.

    Pour a tablespoon of olive oil over the back and use your hands to thoroughly grease it. Season with salt and pepper.

    Heat a frying pan and fry the meat about a minute on each side. This will seal and keep the juices inside the meat. Place the meat in a baking dish, add 1/4 cup beef broth and bake in the oven.

    Bake at 450°F for 15 minutes, lower the temperature to 350°F and bake for 15 minutes or until the internal temperature reaches 155°F.

    Remove from oven, remove the meat from the dish, cover with foil and let the meat rest for 10 minutes.

    Meanwhile, pour the cup of beef broth in the dish where the meat was baked and stir until the meat juices integrate well. Empty in a saucepan and heat on the stove on high. Add the tablespoon of butter. Dissolve a tablespoon of cornstarch in three tablespoons of cold water and pour in the broth. Stir constantly until the sauce thickens.

    Slice the meat and pour some sauce over it. Serve immediately.

    You can use regular raisins or combine them with golden raisins.
