A Puerto Rican baked lechón pork is a perfect dish you can serve when you have lots of guests. You can bake it or you can grill it, all that matters is that the meat is tender and skin is super crispy, like a delicious pork rind. In order to have good results, you need to read the recipe carefully because the pork needs to be marinated for several hours, and spend around three hours in the oven or on the grill, until the lechón pork is golden brown. Buy a good-sized lechón pork so that all your guests can enjoy a big portion and have seconds or thirds. MORE + LESS -


garlic cloves, peeled
teaspoon freshly ground black pepper
tablespoons chopped parsley
tablespoon dry oregano
tablespoon olive oil
sprig fresh rosemary

    Chop the peeled garlic finely. Mix with the salt, pepper, parsley, oregano and olive oil.

    Using the tip of a knife, make some cuts on the pork skin and rub the marinade so it penetrates the cuts.

    Put the pork in a large bag or in a closed container that you can leave in the fridge so it marinates for at least 12 hours.

    Preheat the oven to 375 °F.

    Place the pork in a roasting pan with a grill rack. If you want, you can also add some chopped vegetables at the bottom, but this is completely optional.

    Put the rosemary sprig next to the lechón pork and bake for about three hours or until the skin is really crispy and golden brown.

    If you want, you can collect the juice coming out of the pork and make gravy to serve with it.

Expert Tips

  • Use a pork leg or pork meat instead of a lechón pork, but adjust baking times.
