Ingredients

  • 2 large chicken breasts, with the bones and skin intact (you can also use a whole chicken cut into sections).
  • 2 cups stout or black beer
  • 2 cups small carrots, washed and peeled
  • 2 cups small potatoes, left unpeeled
  • 1 white onion, cut into thick slices
  • 1 green bell pepper, julienned
  • 1 red bell pepper, julienned
  • 2 teaspoons herbes de Provence seasoning
  • 1 teaspoon sea salt
  • 2 stems fresh thyme
  • 2 stems fresh oregano
  • 1 tablespoon olive oil

Directions

    Over a plate, spread the olive oil over the chicken breasts and cover each side with herbes de Provence and sea salt.

    Then place the onions, bell peppers, carrots, and whole potatoes inside a glass baking dish and lightly season with more herbes de Provence and salt. Next, arrange the chicken to sit amongst the vegetables along with the stems of fresh thyme and oregano.

    Finally, pour the beer over the contents and cover with aluminum foil. Bake in the oven for 45 minutes at 450 degrees Fahrenheit. Afterward, remove the foil and continue baking for 15 minutes to let the chicken brown on top.

    The chicken will be ready when the internal temperature reaches 165°F. This recipe is a complete meal in itself-all that’s missing is a rica agua fresca for the kids and a cold beer for the adults.
