Orange-Mint Slush

Add some sparkle to your next get-together with this easy citrus and mint cooler, made with time-saving frozen juice concentrates.

Ingredients

  • 2 cups sugar
  • 7 cups water
  • 3/4 cup fresh mint leaves
  • 1 can (12 oz) frozen orange juice concentrate, thawed
  • 1 can (6 oz) frozen lemonade concentrate, thawed
  • 4 bottles (10 oz each) club soda (5 cups), chilled
  • Additional fresh mint leaves, if desired

Directions

    In 4-quart saucepan, heat sugar, 3 cups of the water and 3/4 cup mint leaves to boiling. Reduce heat; simmer 2 minutes. Cool 1 hour to blend flavors.

    Strain and reserve liquid. In nonmetal freezer container, mix reserved liquid, remaining water, orange juice concentrate and lemonade concentrate; freeze until slush consistency.

    To serve, spoon about 2/3 cup slush mixture into each serving glass; pour 1/3 cup club soda over each. Garnish with mint leaves.

  • A 5-quart ice cream pail is perfect for preparing and storing this refreshing slush.
  • Make the slush mixture ahead and freeze. Thaw 30 minutes before serving.
