Nopal tortillas are not only easy to make, they are simply delicious. Grab a bag of fresh nopales, a bunch of cilantro and corn flour, and you are set to make these vibrant nopal tortillas. I like to serve mine warm with refried beans and a sprinkle of cheese.

Ingredients

  • 1 medium nopal pad, needles/thorns removed and sliced
  • 1 cup water
  • 1/4 cup cilantro, washed and chopped
  • 2 cups corn flour for tortillas
  • 1/4 tablespoon of salt

Directions

    To a blender add sliced nopal, water and cilantro; blend until smooth.

    In a bowl, combine corn flour, salt and nopal water.

    Knead to form a smooth dough.

    Divide dough into 16 portions and roll into smooth balls.

    Place one at a time onto a tortilla press lined with plastic film or plastic bag, press firmly.

    Cook on a preheated comal or grill for two minutes on each side.

    Serve warm.

    Use scissors to cut alongside Ziploc bag to create a foldable plastic liner for your tortilla press.

    Freeze leftover tortillas wrapped in plastic wrap to use at a later day.
