Mother's Day is right around the corner, and I've been thinking about preparing a cake to celebrate this day that is so special for so many of us. Since I'm not a big fan of frosting, I chose this naked cake recipe. It looks more complicated than it really is, and I love the final product. Not only does it taste good, but it also looks simply decadent. I hope you like it as much as I do, and I invite you to try it for yourself.

Ingredients

For the cake

  • 1 2/3 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 3/4 bars butter, softened
  • 1 cup sugar
  • 4 eggs
  • 2 tablespoons milk

To assemble the cake

  • 1 cake, prepared
  • Vanilla frosting (or any flavor)
  • Strawberries, whole and sliced
  • Powdered sugar, to taste
  • Fruit and flowers, for garnish (optional)

Directions

    For the cake: Preheat the oven to 350°F. Grease and flour a round cake pan.

    In a medium-sized container, mix the flour, baking soda and powder. Set aside.

    In another container, beat the butter and sugar at medium speed for around 5 minutes. Add the eggs, one at a time, until fully incorporated. Add the milk and continue mixing.

    Reduce hand mixer speed to low, add the flour mix (divided in 3 parts) until batter is uniform.

    Pour the batter into the pan. I used two 6-inch pans, but you can use any size. Keep in mind the cake will rise as it bakes, which is why I recommend using large pans.

    Bake for about 20 minutes, or until golden brown. If a toothpick inserted in the center comes out clean, the cake is ready.

    Let the cake cool for 5 minutes before removing from the pan. Let cool completely.

    To assemble the cake: Cut each cake in half creating 2 layers, or more depending on the desired height.

    Use 1 of the halves as the base of the cake. Add 1 tablespoon of frosting to the center of the cake. Use a small spatula to gently spread the frosting.

    Arrange sliced strawberries in the frosting, and top with the other layer of cake. Repeat the process with the remaining frosting and fruit, making sure each cake layer is centered and level.

    Decorate with the whole strawberries, using toothpicks to arrange the fruit. Dust with powdered sugar, and use a brush to add powdered sugar to the sides of the cake (if desired).
