Guava has always been one of my favorite fruits, whether it's fresh, in drinks or juices, in sorbets or jellies, and especially in tarts, cakes or sweet empanadas. All it takes is the aroma of the ripe fruit to take me back to the tropics, where I grew up.
I remember coming home one day after culinary school and deciding to prepare a crostata using a different combination of ingredients: the base was pie dough, the filling guava paste cut into strips, and the topping a delicious streusel of butter, cream cheese, cinnamon and sugar.
The result was delicious, and since then it has become a favorite in my home. This is another version of the original, in mini form with Fiber One™ Protein as the topping, an ingredient that works wonderfully with this kind of recipe.
As you will see, the recipe only requires three ingredients: refrigerated pie dough, guava paste and the cereal. That's all you need to create a delicious pastry in just a few minutes. Enjoy!
