Ham and Potato Croquettes

I love croquettes because they make such a versatile, not to mention tasty, appetizer. I make them two ways: sometimes with a white sauce and other times with potato. These ham croquettes are creamy inside and crispy outside. Plus, they’re budget-friendly and ideal for freezing so the next time company comes over unannounced, you’ll have something flavorful to cook up in a pinch!

Ingredients

  • 4 1/2 lb mashed potatoes
  • 8 ham slices, finely chopped
  • 1/2 cup shredded mozzarella cheese
  • 3 tablespoons butter, melted
  • 1/4 cup milk
  • Salt & pepper, to taste
  • 2 eggs, beaten
  • 1/2 cup bread crumbs
  • Oil, for frying

Directions

    Put the mashed potato in a container with the chopped ham, cheese, butter, milk, salt and pepper, and mix well.
  • 2
    Form croquettes and dip them first in the egg wash before breading with bread crumbs.

    Heat a frying pan with the oil and, when it’s very hot, add the croquettes.

    Cook for 5 minutes or until golden brown, remove and set on paper towels to absorb extra oil.

    Serve and enjoy.
