Gluten-Free Mini Cakes

Believe it or not, these delicious mini cakes are made with rice flour and almonds; meaning they are gluten-free. This makes them perfect for anyone who suffers from gluten intolerance. The first time I made them many years ago, I had my concerns about the results because I thought that the dough wouldn’t behave the same as regular cake dough. But I was very surprised to find that the rice flour allowed the mini cakes to rise and gave them a soft texture. The frozen cube of chocolate that we hide inside melts in the oven and when you cut them open their heart of chocolate is exposed, just like the lava cake and its molten chocolate center. They say it was invented by accident, like many of the greatest inventions. When you make these mini cakes you can use a muffin mold or baking rings wrapped in parchment paper, so they rise and become soft and delicious.

Ingredients

  • 8 ozs bitter chocolate, chopped in large chunks
  • 2 ozs of strong instant coffee
  • 1/4 cup of butter
  • 3 eggs
  • 1/2 cup of sugar
  • 1/2 cup ground almonds
  • 1/3 cup flour rice
  • 2 spoonfuls of cocoa powder

Directions

    Melt half of the chocolate with the coffee and pour with a tablespoon into an ice cube tray. Freeze.

    Grease your mold of choice and refrigerate.

    Preheat oven to 375°F.
  • 4
    Using the Bain Marie method, melt the rest of the chocolate with the butter. Cool to room temperature.

    Separately, whisk the eggwhites with sugar until very firm.

    Add the egg yolks to the melted chocolate one by one, then add the almonds and the rice flour.

    Finally, add the merengue you’ve just created using a spatula.

    Pour the dough into the mold, 1/3 of the mold.

    Place a cube of chocolate on top.

    Cover with the rest of the dough.

    Bake for 18-20 minutes. Cool for 10 minutes on a grate.

    Remove from the mold while they’re warm, sprinkle with cocoa powder and serve immidiately.

    You can serve them with a scoop of vanilla ice cream or Crème Anglais.

    Red fruits are a pretty garnish and bring the dish to life. If you have strawberries or raspberries in the fridge, go ahead and use them.
