Believe it or not, these delicious mini cakes are made with rice flour and almonds; meaning they are gluten-free. This makes them perfect for anyone who suffers from gluten intolerance.
The first time I made them many years ago, I had my concerns about the results because I thought that the dough wouldn’t behave the same as regular cake dough. But I was very surprised to find that the rice flour allowed the mini cakes to rise and gave them a soft texture.
The frozen cube of chocolate that we hide inside melts in the oven and when you cut them open their heart of chocolate is exposed, just like the lava cake and its molten chocolate center. They say it was invented by accident, like many of the greatest inventions.
When you make these mini cakes you can use a muffin mold or baking rings wrapped in parchment paper, so they rise and become soft and delicious.
