At the beginning of the year we're usually a bit more conscientious of our financial and physical well being, and these topics are often focal to our end-of-year resolutions. We don't need to invest a lot of time or deny ourselves delicious food to reach our goals. There are many dishes that only need a few ingredients to create something mouthwatering, like this tasty fresh pasta salad. This is a recipe I learned when I was very young and can be adapted to any budget and time since we can add and omit ingredients however we like. Ingredients

cup whole wheat pasta bows or spirals

small jar roasted red peppers, finely chopped

jar of basil pesto of your preference

cup fresh arugula
Mozzarella cheese, shredded

    Cook the pasta as per their instructions.

    Once ready, let cool for a few minutes and mix with the rest of the ingredients.

    Serve immediately or refrigerate in a sealed dish for up to 2 days.
