Enchilada pie is one of the best dishes my tía Rosie used to make for me. She has been one of the biggest culinary influences in my life, and when I was a young girl she was always super patient with me in the kitchen. Whenever my tía Rosie made enchilada pie, it was always a special event for me because I enjoyed every step of the recipe. And now I have my own version! As I like to experiment in the kitchen, I've changed the original recipe a bit over the years. The version I'm presenting to you here includes extra cheese, chile, onions and olives. This is comfort food at its best! MORE + LESS -

Ingredients

tablespoon vegetable oil, plus 2 cups

cups enchilada sauce

corn tortillas

cups mix of shredded Mexican cheeses

black olives, sliced

    Preheat oven to 350º F.

    In a large frying pan over a low flame, add 1 tablespoon of oil.

    Heat 2 cups of vegetable oil in a small frying pan over medium-low heat.
  • 4
    Add the enchilada sauce to the large frying pan.
  • 5
    Add one corn tortilla at a time to the small frying pan and fry them.
  • 6
    Once the tortilla is somewhat hard, remove from the pan and spread the enchilada sauce over it.

    Place the tortilla in a 15 x 10 inch casserole dish.

    Layer the bottom with 6 fried tortillas with sauce.

    Top that layer with 1 cup of cheese, and 1 tablespoon of sliced olives.

    Repeat the process 3 times with 6 tortillas, 1 cup of cheese, and 1 tablespoon sliced olives.

    Bake for 30 minutes or until the cheese is melted. Remove from the oven and serve.

Expert Tips

  • If you're not a fan of olives, you can always replace with chopped onions.
