Enchilada pie is one of the best dishes my tía Rosie used to make for me. She has been one of the biggest culinary influences in my life, and when I was a young girl she was always super patient with me in the kitchen. Whenever my tía Rosie made enchilada pie, it was always a special event for me because I enjoyed every step of the recipe.
And now I have my own version! As I like to experiment in the kitchen, I've changed the original recipe a bit over the years. The version I'm presenting to you here includes extra cheese, chile, onions and olives. This is comfort food at its best!
