Fiesta Rice

When selecting a side dish for any entrée my mind always gears towards rice because you can do so much with it. Just like a blank canvas. My love for rice started at a young age. It was always the side dish of choice next to my mom's home cooked meals. I absolutely loved eating it any way she made it. Every time I make fiesta rice, the smell and look takes me back to my mother's kitchen and all the wonderful talks we had while cooking. The name came to be because the beautiful vegetables that make this rice so delicious look like a sprinkle of confetti. This favorite side dish is simple to prepare, but it packs a spicy punch with the added green chiles. Don't worry, the smooth dollops of cream cheese tame the heat and it tastes absolutely wonderful.

Ingredients

  • 1 cup long grained rice
  • 2 tablespoons olive oil
  • 1/2 onion, chopped
  • 1 garlic clove, minced
  • 1 large red bell pepper, chopped in small pieces
  • 1 (4 oz.) can hatch green chiles
  • 7.5 ounces whole kernel corn
  • 2 cups unsalted chicken or vegetable broth
  • 1 teaspoon salt
  • 4 ounces cream cheese

Directions

    Rinse and drain rice.

    In a large heavy bottom pan, heat oil over medium heat.

    Add onions and sauté for approximately 5 minutes, or until tender.

    Add garlic and cook for one minute. Stir in rice, bell pepper, green chiles and corn. Cook for 1 minute.

    Add broth and salt. Cover and reduce heat to simmer for approximately 25 minutes. Stir occasionally.

    Remove from heat and let stand for 10 minutes. Add dollops of cream cheese and serve.
