Ingredients

Mint and Avocado Spread

  • 1 ripe avocado, peeled, pitted, and chopped into pieces
  • 4 oz cream cheese, room temperature
  • 8-10 fresh mint leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon lemon juice

For the Sandwich

  • 6–8 eggs
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 6 slices of bread
  • 1/2 cup tomato, chopped (optional)
  • 1/4 cup jalapeño peppers, chopped (optional)

Directions

    Spread preparation: Place all of the ingredients into a small food processor and blend until everything is well mixed.

    Beat the eggs in a medium-sized bowl. Add salt and pepper; mix until blended.

    Melt the butter in a non-stick pan on medium heat. Add the egg mixture to the pan. Stir lightly with a rubber or silicone spatula. As soon as the eggs start to cook, reduce the heat to low. Gently fold the cooked portions of egg into the non-cooked portions with a spatula. Avoid stirring constantly. Cook for 3 to 4 minutes or until the egg cooks, but is still somewhat runny. Remove from heat.

    Take 1 slice of bread and apply the mint and avocado spread to taste. Add the scrambled eggs, tomatoes, and jalapeños, if you decide to use them. Cover with another slice of bread, mint spread, eggs, tomatoes, jalapeños, and the last slice of bread. Repeat the process to make another sandwich.
