Easy Chorizo and Cheese Calzone

This easy calzone recipe has saved my life a few a times. Especially on those days when I’m very short on time. If you're going to prepare it for your kids, just be sure the chorizo isn't too spicy. To make it even more nutritious, you can add other veggies like spinach or shredded carrots. They won't even notice! Serve with a tasty salad and you’re done: a full dinner in less than 30 minutes.

Ingredients

  • 1/2 cup of onions, diced
  • 1/2 cup of green pepper, diced
  • 3 chorizos, skin removed and cut into pieces
  • 1 cup of ricotta cheese
  • 1/2 cup of Parmesan cheese, shredded
  • 1 cup of Monterey Jack cheese, shredded
  • 2 eggs
  • Salt and pepper to taste
  • 1 tablespoon of water
  • 1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust

Directions

    Sauté the onions, pepper and chorizo in a medium saucepan over medium heat until they are lightly cooked. Use a spoon to begin shredding the chorizo as it cooks. Once cooked, remove from the heat and let cool.

    Mix the ricotta, Monterey Jack, parmesan and egg in medium bowl. Season with salt and pepper to taste. Combine the chorizo and cheese mixtures until well incorporated. Set aside.

    Lightly beat the other egg with the water in a small bowl. Set aside.

    Preheat the oven to 400°F. Cover a baking dish with parchment paper.

    Open can of dough and follow the instructions. Extend the dough over a clean surface and lightly sprinkle with flour. Use a knife to cut the dough into 4 equal rectangles. Place 3-4 tablespoons of mixture on the left end of the rectangle leave approximately 1/2 inch of space from the border.

    Carefully fold over the right end of the rectangle. Seal the borders with the help of a fork. Place on the baking dish. Repeat this process with the remaining rectangles.

    Use a brush to spread the egg mixture over the calzones.

    Bake for 20 minutes or until golden brown.

    Serve hot with a side of salad.
