Ingredients

  • 4 cups Wheaties™ cereal
  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup honey mustard or Italian dressing
  • Yellow mustard for dipping, if desired

Directions

    Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet. Place cereal in shallow bowl.

    In another shallow bowl, place honey mustard. Dip each chicken piece into dressing, then roll in cereal to coat. Place in pan.

    Bake about 10 minutes or until chicken is no longer pink in center. Serve with yellow mustard.

    Coating the chunks is a snap when you work quickly with one fork in each hand. Drop the chicken chunks into the dressing; turn to coat, then lift into crumbs with one fork. Use the other hand (and fork) to turn and coat in the crumbs and voilà—neatly coated chicken chunks!

    Serve these crispy nuggets with purchased dipping sauces—barbecue, honey-mustard or sweet-and-sour—just like your favorite drive-thru!
