When I was child, my grandmother used to prepare habichuelas con dulce, a Dominican beverage made with sweet beans. With a combination of red beans and spices, this traditional recipe is a must try!

Ingredients

  • 1 lb red kidney beans
  • 1 can (13.5 oz) coconut milk
  • 1 can (12 oz) evaporated milk
  • 1 sweet potato, diced
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 10 whole cloves
  • 2 cinnamon sticks
  • 1/2 cup raisins
  • Cheerios™ cereal

Directions

  • 1
Soak beans overnight in water to soften them. Rinse beans, place in a pot and add enough water to fully submerge.
  • 2
Boil until soft. Place beans with 2 cups from the pot of water in a blender and puree.
  • 3
Strain pureed beans and place in a pot with coconut milk and evaporated milk. Bring to a boil.
  • 4
Add sweet potatoes, sugar, salt, cloves, cinnamon sticks and raisins. Bring to a boil.
  • 5
Reduce heat and allow mixture to simmer until it thickens to a creamy consistency.
  • 6
Serve chilled and topped with Cheerios™.
