These crunchy cheese potato torrejas are absolutely delicious. The best thing about them is that they’re baked so they’re soft inside and crispy on the outside. Of course, you can also fry them if you prefer. They take little time to make, but you can always prepare them today and eat them next week. We’ve had them for lunch with a side green salad, but they’re also great as a side dish with chicken, beef or pork.

Ingredients

  • 1/2 pound potatoes, peeled
  • 1 egg beaten
  • Salt and pepper to taste
  • 1 cup grated mozzarella cheese
  • Spray cooking oil

Directions

    Preheat oven to 375° F.
  • 2
    In a pot of water, cook the potatoes for 15 minutes or until soft.
  • 3
    Drain them, press them and add the beaten egg, salt, pepper and mozzarella cheese.

    Shape the torrejas into patties and put them in a tray greased with spray oil.
  • 5
    Let stand in the refrigerator for 5 minutes.
  • 6
    Bake for 15 minutes, turning them over as they cook.
