Crunchy Baked Avocado Tacos

I like to eat them with a little bit of salt and lime, or adding them to my arepas for breakfast. I even like them with my patacones and they definitely can't be missing from my soups and stews. Ingredients

  • 1 ripe avocado, but firm
  • 1 egg
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/2 cup Progresso™ Bread Crumbs
  • Salt and pepper to taste
  • Cooking spray
  • 4 corn tortillas
  • 1/4 cup shredded cheddar cheese
  • 1/2 cup chopped lettuce starting
  • 1/4 red onion, thinly sliced
  • 1 jalapeño thinly sliced
  • 1/2 cup chopped tomatoes
  • Pico de gallo or red sauce to serve
  • Cilantro for garnish

Directions

    Preheat the oven to 425°F. Cover a cooking tray with aluminum foil and sprinkle with cooking spray.

    Place the flour in a bowl and the egg in a second bowl. Add the crumbs, pepper and salt to a third bowl and mix to combine.

    Cut the avocados in half, remove the seed and cut into 4 equally thick slices. Use a spoon to remove the slices completely from the peel. Place on a dish.

    Place the slices of avocado in the flour, then in the egg mixture and finally in the crumbled bread.

    Place the slices of avocado in one layer on the baking dish. Sprinkle with cooking spray. Bake for 5-7 minutes, then flip and cook for another 5-7 minutes until browned and crunchy.

    To serve, add lettuce to the tortillas, add 2-3 slices of avocado. Cover with toma-toes, cheese and jalapeño. Then with red onion and sauce. Decorate with cilantro and serve right away.
