large onion, chopped (1 cup)

clove garlic, finely chopped

lb fresh tomatoes, peeled, chopped

cups Progresso™ chicken broth (from 32-oz carton)

can (6 oz) tomato paste
1
teaspoon salt

teaspoon ground cumin
1/2
cup whipping cream
Sour cream, if desired

    To make Cilantro Aioli, in 6-inch skillet, heat 2 tablespoons oil over medium-high heat until hot. Stir in garlic; cook 2 minutes. Place garlic and cilantro in mini food processor or blender. Cover; process until smooth. Set aside until ready to serve.

    In heavy 3-quart saucepan, heat 1 tablespoon oil over medium heat. Cook onion and garlic in oil 3 to 5 minutes, stirring frequently, until tender. Stir in chopped tomatoes, broth, tomato paste, salt and cumin. Heat to boiling; reduce heat. Simmer uncovered about 5 minutes or until tomatoes are soft. Stir in whipping cream.

    In blender or food processor, place 2 1/2 cups of the tomato mixture. Cover; blend on medium speed about 30 seconds or until smooth. Pour mixture into large bowl. Repeat with remaining tomato mixture. Return pureed mixture to saucepan. Heat over medium heat, stirring frequently, until hot. Divide among 4 soup bowls. Top each serving with sour cream and aioli.
