Colombian Bread Cake

My two siblings and I agree that the Mother’s Day celebration is one of the most important family events. We have a lot to be thankful to our mother for! She has always been very supportive of us. We’re so excited! We’re getting together after five years to celebrate it, and what better way to start than with lots of hugs, a delicious lunch made by my sister and, of course, a fabulous dessert made by me? For years, when I still lived in Colombia, I made my mom this delicious torta de pan (bread pudding cake) to honor her day. It’s our tradition: coffee and a nice piece of this dessert that’s soft, sweet and tart, because of the fruit sauce covering it. We never had any leftovers. This is truly a successful dessert. So I invite you to get together with your family and friends and make this delicious torta de pan. I guarantee they will be amazed. If you’re lucky enough to have your mother with you, spoil her like she deserves and sweeten her life!

Ingredients

For the torta de pan:

  • 1 large loaf of bread (French) or 4 buns
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) condensed milk
  • 2 1/4 cups melted butter
  • 2 tablespoons guava jam

For the sauce:

  • 1 cup blackberries or blueberries
  • 2 tablespoons brown sugar
  • 3 tablespoons water

Directions

    For the torta: Preheat the oven to 350°F.
  • 2
    Cut the bread into pieces, as small as possible (crumble it). Place it in a large bowl and add the evaporated milk, condensed milk, melted butter and the two tablespoons of guava jam. Combine very well.

    Butter a baking pan (8 X 8 inches).

    Spread the mixture out evenly on the sheet. Cover with aluminum foil and bake for 30 minutes. Remove the aluminum foil and bake for another 10 minutes to allow the top to brown.

    Take it out of the oven and let it rest for 10 minutes prior to serving.

    For the sauce: Place the blackberries or blueberries in a medium pot over low heat. Add the brown sugar and three tablespoons of water. Stir constantly for about 10 minutes until you have the consistency of jelly.

    To give the sauce a tarter flavor, you may add the juice of half a lemon.
