Cinnamon Toast Crunch™ French Toast

When I work with kids I turn into a creative mind; they're my inspiration. This is why I enjoy teaching my Kid Chef classes. I love showing them how to dress a table, how to combine flavors and texture, and how to enjoy fun food. There's one recipe in particular that we invented in class that I want to share with you, it's made with French toast stuffed with strawberry cream cheese, and covered with crunchy cereal. Adults love this recipe as much as kids. You can have it for breakfast, brunch or as dessert.

Ingredients

  • 1 large egg, whipped
  • 1/4 cup of milk
  • 1/2 teaspoon of vanilla
  • 1 teaspoon of cinnamon
  • 1 teaspoon of granulated sugar
  • 1 cup of Cinnamon Toast Crunch™ cereal, in little pieces
  • 1 tablespoon of butter
  • Strawberry cream cheese, to spread
  • 4 slices of sandwich bread or French bread
  • 1 tablespoon of honey or maple syrup
  • Powdered sugar, optional

Directions

  • 1
    Mix the eggs with the milk, vanilla, sugar and cinnamon in a medium bowl.

    Spread the cereal around in a shallow dish.
  • 3
    Heat the griddle or pan with 1 tablespoon of butter.
  • 4
    Cover each piece of bread in strawberry cream cheese.
  • 5
    Soak both sides in the extra mixture and pass through the cinnamon toast crunch applying pressure so that the cereal adheres.

    Cook on medium heat for 1-2 minutes on each side until the toasts begin to turn golden brown. Use a spatula to carefully remove the pieces of toast from the griddle or pan and sprinkle with honey or syrup. Sprinkle with powdered sugar if you like. Serve hot.
