Childhood memories are a precious treasure that we always remember no matter how much time passes by. I have very vivid memories of my mom making delicious snacks on afternoons when my brother and I would do our homework. The apple doesn't fall too far from the tree, and today I’m the one making the snacks for my kids. I like to make spongy and nutritious cupcakes to give my kids as their afternoon snack. I've added nutritious ingredients and a crunchy part to this useful recipe. I added crushed Pretzel Chocolate and Caramel Fiber One™ bars to the mix, and that makes the cupcakes irresistible. Turn each bite into a delicious experience as the taste of the sweet caramel mixes with the salty crunchy pretzel; it is truly an explosion of flavors in your mouth. Ingredients

  • 4 Fiber One™ 90 calorie chewy bars chocolate caramel and pretzel, crushed
  • 1 box Betty Crocker™ Super Moist™ Butter Recipe Yellow Cake Mix
  • 1 cup milk
  • 1 bar butter
  • 3 eggs
  • 1/2 teaspoon vanilla extract

Directions

    Place bars in a plastic bag. Squeeze out the air and seal. Crush bars with a kitchen mallet or pounder (you can use a food processor, just don’t over do it).

    Preheat oven to 350 °F. Prepare a cupcake pan with cupcake liners.

    In a large bowl, combine cake mix, milk, eggs, and mix with electric mixer; add vanilla extract at the end. Mix on low for 30 seconds then on high for 2 minutes. Use a spatula to mix well the contents at the bottom of the bowl and on the sides. Add the crushed fiber one bars and mix. Save a little of the crushed mixture until the end. Fill each cupcake liner 3/4 of the way.

    Bake for 18-23 minutes. Insert a toothpick or knife in the middle of the cupcake; if it comes out dry, the cupcakes are ready. Remove from oven and top with a little of the crushed Fiber One™ bars. Serve and enjoy!
