Chocolate and Strawberry Oatmeal Parfait

My most cherished childhood memories are the breakfasts my mother made for us early in the morning before going to school. Sometimes they were very simple breakfast ideas, like melted cheese on toast or fried plantains with sugar. Other times they were a bit more elaborate, like pancakes, waffles, or French toasts. Either way, they were always delicious, because they had the most important ingredient to make the food taste really good: love. A simple way to increase the “love” factor in the food you make is to put extra care in the decoration. Anyone can tell when a dish was made in a rush and without much effort, or when every single detail was taken into consideration, because you want the person eating to enjoy not only the taste, but the whole eating experience. If you’re trying to give your kids a nourishing breakfast for school, but they’re not big fans of wholesome foods, decoration can completely change their receptivity. Ingredients

  • 3/4 cup oatmeal
  • 3 cups water
  • 1 cup strawberries
  • 1 tablespoon raw cocoa powder
  • 1 tablespoon raw honey or maple syrup
  • 1/4 cup blueberries
  • 1/4 cup almonds
  • 2 tablespoons goji berries

Directions

    Put the oatmeal and water in a small pan, bring to a boil, lower the heat, and simmer for about half an hour. If it dries up, add more water.

    When the oatmeal is ready, blend half of it with the strawberries and half the honey, and the other half with the cocoa powder and the remaining honey. Taste to see if it’s sweet enough, or if you need to add more honey.

    Pour the chocolate oatmeal into 2 cups. Cover with sliced strawberries, blueberries, and goji berries, and then pour the strawberry oatmeal on top.

    Top with more berries and nuts.

    If you want to add more color and fun to this breakfast, top with grated coconut and more berries (blackberries, raspberries, etc.).

    You can also make this parfait using quinoa, millet, amaranth, buckwheat, kasha or brown rice.
