Christmas in Chile means a turkey dinner, generally stuffed with plums or other dried fruit, Chilean papas duquesas and warm applesauce. Each family has their own favorite version, but the papas duquesas can always be found on the menu. This quick version made with instant puree is excellent and I highly recommend it.

Ingredients

  • 1 box (4.8-oz) BettyCrocker® Yukon Gold instant mashed potatoes
  • 3 egg yolks
  • 4 tablespoons of butter
  • 1/4 -1/2 cup of warm milk

Directions

    Preheat the oven to 350°F.

    Melt the butter.

    In a large bowl, beat the yolk until well mixed, add the melted butter, and continue whipping until the mixture is consistent.

    Add the 2 pouches of instant mashed potatoes from the box. Stir and let soak up the liquid for one minute.

    Heat the milk, but don’t bring to a boil. Add 1/4 cup and stir; and only add more if necessary. Use no more than 1/2 cup of milk. You should end up with mixture that’s thick enough to mold into balls.

    Make the balls 1-inch in diameter using your hands.

    Place the balls on a baking sheet and bake for 10 minutes. Turn to cook evenly and let bake another 10 minutes. Serve hot.

Expert Tips

    You can make the mashed potato balls the day before and leave refrigerated until you’re ready to bake. Add 5 minutes to you baking time or until they’re golden.
