Carbonada is a Chilean stew that is very common in the middle of the country. The stew’s essential ingredients are rice, potatoes and pumpkin. The other vegetables that are added vary depending on the season of the year: in the summer, green beans and corn are used often; in the winter, peas and frozen vegetables take their place. Enjoy this simple and economic dish with your entire family.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, finely diced
  • 1 lb beef (use eye of round steak)
  • 1 clove garlic, finely chopped (optional)
  • 2 large potatoes, peeled and cut in 1/2 inch cubes
  • 1/2 lb yellow pumpkin, cut in 1/2 inch cubes (may be frozen)
  • 2 carrots, cut in 1/2 inch cubes
  • 1/2 cup rice
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1 tablespoon fresh parsley, chopped
  • 1 cup cut green beans, frozen and finely chopped
  • 1/2 cup Corn, frozen
  • Salt and pepper, to taste

Directions

    In a large stock pot, heat 2 tablespoons of vegetable oil over medium heat.

    Add the onion and cook for 5 minutes. Stir occasionally. Push the onions aside and add the cubed beef. Brown beef for 2 minutes on one side, flip meat over and brown the other side for 2 additional minutes.

    Stir the onion and beef together and add the chopped garlic, if you choose to include it. Stir and brown garlic for 1 minute.

    Add the potatoes, pumpkin and carrots. Stir and add the rice. Cook for 1 minute.

    Add the vegetable broth, oregano, cumin and parsley, thoroughly stir all ingredients and cook with the pot covered for 15 minutes on low heat (pot should remain covered throughout the cooking process). Add more hot broth if the liquid evaporates. Be sure the potatoes, rice and pumpkin are fully cooked.

    Uncover, stir and add the green beans and corn. Stir and cook for 5 more minutes with the pot uncovered.

    Serve hot.
