Who says we can't prepare salads and keep them in jars? This way you can take them to work, school or with us when we go out with family. They're light, fresh and delicious meals. Just fill the jars with lettuce, spinach, arugula, chicken, beef and anything you like. I recommend using jars with a large mouth so you can fill it with ease.

Ingredients

  • 1 1/2 cups Romaine lettuce
  • 1 1/2 cups baby spinach
  • 12 cherry tomatoes
  • 1 slice of red onion
  • 1/2 cup shredded carrots
  • 8 slices cucumber
  • 1 cup grilled or boiled chicken breast
  • 1/4 cup of mozzarella or parmesan, shredded

Directions

    You'll need 2, 32-oz glass jars.
  • 2
    Wash and strain the vegetables, cut into small pieces so you won't need a knife when you're ready to eat. Layer them in the jar.

    Add the chicken and cheese.

    Add your favorite dressing when your ready to eat and carefully move the jar around so it doesn't fall.

    You can uses pieces of pancetta, croutons, mushrooms, cauliflower, broccoli and even cold pasta.

    You can prepare the jars and keep them refrigerated up to 5-6 days before consuming them.
