Chia Pudding with Cheerios™

Chia seeds are a wonder in the kitchen as they can be used to make a variety of delicious dishes, many of which don't requiring any cooking, as in the case of this breakfast dish. It's so simple that even a child can do it. It's as easy as mix, refrigerate and enjoy. To switch things up a bit and give the pudding some more texture, I added prickly pear that I found at the local produce market that specializes in Latin-American products. I love the red ones because of their color, but you could also use orange or green ones. A little bit of Cheerios™ adds that little bit of crunch and all the necessary nutrients to get the day started on the right track. You should add the cereal at the end so it doesn't get soggy. You can create different versions of this recipe by using the fruit of your choice or your favorite type of milk. Summer is the perfect time to try this recipe with different types of seasonal fruits. A delicious breakfast doesn't have to be complicated.

Ingredients

  • 2 cups drinkable fruit yogurt
  • 1/3 cup chia seeds
  • 1 tablespoon flax seeds
  • 1 cup red prickly pear, peeled and chopped
  • 1 tablespoon lemon juice
  • 1 cup Cheerios™ plus Ancient Grains cereal
  • 1 star fruit, sliced

Directions

    In a bowl, combine yogurt, chia seeds and flaxseed. Mix well until everything is combined. Let rest for 10 minutes. You can make this the night before, just be sure to cover and refrigerate.

    Serve in a cup or small glass, alternating layers of yogurt with the prickly pear chopped and mixed with lemon juice. Add a few tablespoons of Cheerios™ as the last layer.

    Top each pudding cup with more prickly pear and about 1/4 cup of Cheerios™. Finish with a slice of star fruit.

    Serve immediately.
