This cauliflower rice with spinach is simple but flavorful. You can make it within a half an hour and it’s a perfect side dish for meat or fish. Its delicate and creamy flavor surprised my family, and even my children devoured it. But don’t let the word “rice” fool you; it’s easy to make because you only need a cauliflower chopped into florets and a food processor. Don’t skip the butter because its flavor goes very well with spinach. Give it a try!

  • 1 medium-sized cauliflower
  • 3 tablespoons butter
  • 2 garlic cloves, peeled and finely chopped
  • 2 tablespoons chopped onion
  • 4 oz spinach, washed and chopped
  • Salt to taste

    Remove the green stems in the cauliflower and separate into medium-sized florets.

    Put a layer of cauliflower florets in the food processor and put a layer of cauliflower florets in the food processor and pulse until you get the “rice”. It takes about 18-22 pulses per batch. Repeat until you’ve processed all the florets. Don’t put them all in the processor at the same time because the sizes will be uneven. It usually takes 3-4 batches.

    Melt the butter in a big pan.

    Fry the garlic and chopped onion in the butter until the garlic is golden brown and the onion is soft.

    Add the cauliflower “rice” and the spinach, season with salt and pepper to taste and cook for 3-5 minutes until you get the desired consistency: 3 minutes if you want a crunchy cauliflower or 5 if you want it softer.
