I’m always looking for new, easy and delicious recipes to introduce my family to new flavors, ingredients, and textures. Last Sunday, I made a cauliflower hash and I served it with fried egg. My family loved it. In a few minutes and using just a few ingredients, we got a good and delicious breakfast. There are many ways to use and cook cauliflower, and this is definitely one of my favorites. I hope you enjoy it.

Ingredients

  • 2 tablespoons olive oil
  • 3/4 lb. cauliflower, chopped
  • 1 onion, chopped
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 3 tablespoons water
  • 1 big garlic clove, chopped
  • 2 teaspoons lemon juice
  • 2 teaspoons fresh parsley, chopped

Directions

    Distribute the cauliflower and onion evenly in a big pan with oil over medium-high heat. Let them cook without stirring until they turn lightly brown.

    Mix the ingredients and add paprika, salt, black pepper and water. Cover the pan and cook until the cauliflower is tender but not too soft, and until it’s golden brown. This should take about 3 to 5 minutes.

    Lower the heat and add the garlic. Cook for 2 more minutes, stirring constantly.

    Add the lemon juice and stir until it evaporates. Serve the cauliflower hash and garnish with parsley.
