Caprese Nachos

Caprese salad is one of my all-time favorite dishes. Perhaps, in my case, this is because it was one of my favorite things on the menu at the best Italian restaurant in Lima when I was growing up. Back then, fresh mozzarella was an absolute treat in my city, and I devoured this dish in a matter of seconds every time I ordered it. If you want to change it a bit you can fill a sandwich with this salad, chop it up and add it to a bowl full of pasta, or… why not turn it into a topping for these delicious nachos? They can be a light dinner, a snack, or be served as hors d'oeuvres at your next dinner party!

Ingredients

  • 2 whole wheat tortillas
  • 1 large tomato (or 2 medium ones)
  • 1 ball mozzarella cheese
  • 1 avocado
  • 1/4 cup basil leaves
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (optional)

Directions

    Preheat the oven to 300° F.

    Cut the tortillas in half, then in half again, and then again so you will be left with 16 slices. Spread on a baking tray. Bake the tortillas for 15 minutes. In the meantime, thinly slice the tomato, the cheese, and the avocado.

    Remove the tortillas from the oven, add a slice of cheese, a slice of tomato, a slice or two of avocado, and a few basil leaves. Sprinkle with salt and pepper. You may add a few drops of olive oil on top of each nacho (although it's not necessary because the mozzarella and tomato will be juicy enough).

    Bake for 5-10 minutes, until the cheese starts to melt or soften, but make sure that the tips of the nachos don't burn.

Expert Tips

  • tip 1
    I added avocado to this recipe because that's how Caprese salad is served in some places, but you can leave it out of the recipe.
  • tip 2
    You can mash the avocado, like guacamole, and spread the chips with it first, with the other layers on top.
  • tip 3
    You can also chop the avocado, tomato, herbs and seasonings into a salsa, and sprinkle each nacho with some of it.
