During the fall, you'll find all sorts of delicious squash and pumpkins; the one I like best is butternut squash. It's a very sabrosa and versatile ingredient, great for combining with other dishes and, best of all, it's very easy to prepare. Today's recipe is a new variation of macaroni and cheese that you can prepare for your kids–it keeps the classic pasta and cheese, but introduces a butternut squash cream into the mix. Let's cook!

Ingredients

  • 2 cups cooked butternut squash, cut into cubes (can be substituted for one can of pureed pumpkin)
  • 1 (8 ozs) package cream cheese
  • 1 cup fresh cream
  • 6 cups fussilli (twisted) pasta
  • 2 cups grated cheese (combination of fontana, mozzarella, asiago and parmesan cheese.)
  • 1/2 cup crushed crackers
  • Salt and pepper, to taste

Directions

    Start by adding the pasta to boiling water with a pinch of salt. Boil for a few minutes without letting the pasta overcook or get soggy.

    To make the butternut cream, combine the cooked squash, cream cheese and fresh cream in a food processor or blender. Blend until all the ingredients form a consistent sauce, then season with salt and pepper.

    Next, combine the cooked pasta with the prepared butternut cream and transfer to a glass baking dish. Sprinkle the grated cheese, then the crushed crackers on top. Bake at 420°F for 15 to 20 minutes or until the pasta begins to brown on top.

    Serve hot and accompany with a rica green salad.
