Buñuelos with Strawberry Sauce

In need of a quick treat? Buñuelos are always a welcome treat as the closing to a family meal. If you have no extra time, these buñuelos are easily prepared in under 30 minutes with an extra sweet strawberry sauce made from fresh strawberries. Your family and dinner guests will be impressed.

Ingredients

  • 1 1/4 cup granulated sugar, divided
  • 1/4 cup ground cinnamon
  • 1 cup grape seed oil
  • 6 fajita-sized flour tortillas
  • 1 lb strawberries, hulled
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons lemon juice

Directions

    Combine 3/4 cup granulated sugar and cinnamon in a medium bowl. Set aside.

    Heat oil in a large sauté pan. Carefully place a flour tortilla in hot oil. Fry for 30-40 seconds on each side or until tortillas begin to brown.

    Quickly transfer fried tortilla to large plate and cover with cinnamon-sugar mixture. Place on a large serving plate. Repeat with remaining tortillas.

    In a medium saucepan over medium heat, combine strawberries, vanilla, lemon juice and 1/2 cup sugar. Bring mixture to a boil and continue to cook for 5 minutes or until the strawberries are soft. Remove from heat.

    Mash strawberries with potato masher and return to heat. Bring to a boil for 3 minutes. Remove from heat and let cool for 10 minutes before serving with buñuelos.
