Buñuelos with Coffee Cream

My family is always up for a sweet treat. But when we don’t have time to stop for ice cream or a chocolate, I put my thinking cap on and play with whatever ingredients I have available in my kitchen before the next grocery run. This time, I got really creative and made buñuelos. We didn’t have to wait until Christmas because I took matters into my own hands and made them at home. I grabbed my instant coffee and made the perfect drizzle of milk and coffee to accompany each crispy bite. If you’re not a coffee drinker, use chocolate syrup, dulce de leche or your favorite marmalade to serve as a sweet dunking sauce for your new favorite autumn-time treat.

Ingredients

Buñuelos:

  • 1/3 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 2 cups oil for frying
  • 8-10 flour tortillas

Coffee cream syrup:

  • 3/4 cup granulated sugar
  • 1/2 cup milk
  • 1 tablespoon instant coffee granules
  • 1 teaspoon vanilla extract

Directions

    Buñuelos: Combine sugar and cinnamon and place in a large flat plate, evenly coating the plate’s surface. Place plate near the area where you will be frying the flour tortillas.

    In a large skillet heat oil and carefully fry tortillas one at a time, turning as they become golden on one side. Immediately place fried tortilla on bed of cinnamon-sugar and using a small spoon, scoop cinnamon-sugar onto fried tortilla. Repeat until all tortillas are fried. Serve topped with coffee cream syrup.

    Coffee cream syrup: In a medium saucepan, combine sugar, milk and coffee granules. Heat until mixture boils; reduce heat to a simmer and continue cooking for approximately 10 minutes or syrup has thickened a bit. Remove from heat and whisk in vanilla extract.
