I love having a variety of hassle-free, tasty meal options on hand that I can put together in a pinch. This brown rice salad is a great example: it's easy to prepare and it can be refrigerated for up to 3 days. In fact, it gets more delicious as the days pass. You can use leftover rice or a package of instant, microwavable rice to save even more time. To complete the meal, I heated up a can of Progresso™ Clam Chowder for the perfect combination of soup with salad! Especially on these chilly winter days. Buen provecho! MORE + LESS -

Ingredients

cups brown rice, cooked
1/2
cup purple onion, finely cubed
1/2
cup yellow bell pepper, finely cubed

cups cherry tomatoes, sliced in half
1/4
cup olive oil

tablespoons balsamic vinegar
Salt and pepper, to taste

can Progresso™ Traditional New England Clam Chowder
1/4
cup coriander leaves (optional)

    Mix the rice, onion, bell pepper and tomatoes in a big bowl.

    Season this salad with olive oil, balsamic vinegar, salt and pepper. Mix until all ingredients are combined. Refrigerate until ready to serve.

    Heat the clam chowder soup following the package instructions.

    Sprinkle the salad with coriander leaves (optional) and serve alongside the hot bowl of soup.

Expert Tips

  • You may also add cubes of fresh cheese or mozzarella to the salad.
  • Sprinkle some cayenne pepper over the soup to give it a spicy kick.
