Banana Cream Pie Popsicles

As the temperature heats up, my freezer is invaded by all kinds of popsicles. They’re always a hit with my kids because they’re both sweet and refreshing, and the first flavor request I got this year was banana cream pie. These pops are not only delicious but also a great way to use ripe bananas!

Ingredients

  • 1 packet (6 ozs) of Marie biscuits, finely ground
  • 1/3 cup butter, melted
  • 3 bananas
  • 2 cups yogurt, natural or vanilla
  • 1 14 oz can sweetened condensed milk
  • 1 teaspoon vanilla extract

Directions

    In a bowl, mix the ground cookies with the melted butter.

    In a blender or food processor, blend the peeled bananas with yogurt, condensed milk and vanilla extract until reaching a creamy consistency.

    Pour into the popsicle molds, filling them to slightly less than half way. Add 1-2 tablespoons of ground cookies and press lightly to even out. Add more of the banana mix and top with more ground cookies. Insert the popsicle sticks and freeze for at least 4 hours or overnight.

Expert Tips

  • tip 1
    You can replace the yogurt with vanilla pudding. Since it's sweeter than yogurt, you won't need to add condensed milk to the recipe.
