I love zucchini and especially baked zucchini fries. These fries are prepared with a delicious mix of herbs, grated cheese, and seasoning, which makes them irresistible. You can prepare them in minutes and they’re perfect as a light lunch, to add to your children’s lunchboxes or to serve them at your next party with a delicious yogurt and oregano dip. My children love them and I serve them as an alternative to regular fries. I hope you try these delicious baked zucchini fries and that your family loves it as much as mine does. MORE + LESS -

Ingredients

zucchinis, chopped lengthwise
1
egg
1/4
cup bread crumbs

tablespoons Parmesan cheese
1
teaspoon dry basil
1
pinch of salt and pepper to taste
1/2
cup Yoplait® Greek yogurt
1-2 tablespoons Sriracha (depending on how spicy you want them)
Juice of 1/2 lemon
1
teaspoon oregano

    Preheat the oven to 350°F. Clean the zucchinis and trim off the ends.

    In a bowl beat the egg. In another bowl, mix the bread crumbs, parmesan cheese, basil, salt, and pepper.

    Using a fork, put the zucchini sticks in the mixture of egg and then dip them in the bread crumbs.

    Transfer to a baking tray coated with cooking spray.

    Bake for 15 minutes. Remove from the oven and then turn them over carefully. Bake at 350°F for 5 -10 more minutes or until they’re golden brown.

    In a bowl, mix the Greek yogurt, Sriracha sauce, lemon, oregano and salt to taste. Serve this dip with the zucchini fries.

Expert Tips

  • You can also use tomato sauce instead of Sriracha, if you don’t like spicy dips.
